Linda M. Arterburn, Ph.D. is Senior Director of Clinical Research at Martek Biosciences Corporation in Columbia, MD. In her present role, she leads the clinical research department specializing in dietary supplements for therapeutic and infant formula applications. Her research has focused on benefits of omega-3 fatty acids for cardiovascular disease, infant development, pregnancy and lactation, neurological and visual disorders, and cancer.
Elena Carbone, Dr.PH, R.D., L.D.N. is an Assistant Professor in the Department of Nutrition at the University of Massachusetts, Amherst. Her research interests focus on theory-informed multilingual, multicultural adult education; literacy; learning and teaching styles; distance education and health promotion and disease prevention. Dr. Carbone is currently evaluating the effectiveness of online education for health professionals.
Nancy L. Cohen, Ph.D.,R.D., L.D.N. is Professor and Head of the Department of Nutrition at the University of Massachusetts, Amherst, and an Extension Faculty Member with the University of Massachusetts Extension. Her research and teaching centers around nutrition and food safety education, and distance education using technology. Dr. Cohen has designed and implemented nutrition courses via the Internet for teachers, dietitians, undergraduate students, and low literate learners for almost 10 years, and will be adapting this seminar into an online format for wide dissemination.
Eric A. Decker, Ph.D. is Professor and Fergus Clydesdale Endowed Chair in the Department of Food Science at the University of Massachusetts, Amherst. Dr. Decker has been actively conducting research to characterize mechanisms by which lipids oxidize in heterogeneous food systems along with the role of antioxidants and lipid oxidation in disease processes. His research also includes development of technologies to maximize the concentrations and stability of bioactive lipids such as omega-3 fatty acids in processed foods.
Elaine Krueger is Director of the Environmental Toxicology Program in the Center for Environmental Health, Massachusetts Department of Public Health. Ms. Krueger participates in the U.S. Environmental Protection Agency national efforts to coordinate state health department advice to consumers regarding consumption of fish and has worked with the U.S. Food and Drug Administration and food regulatory programs in Massachusetts with regard to advice on
consumption of commercial species. |
