Please read the following sections of the booklet, To Your Health! and the accompanying fact sheet. Then complete the questions in "Assess Your Menus for Food Safety Hazards.”

Read:

  • To Your Health! pages 1 through 4. You will see that there are many causes of food borne illness and that it can a serious problem for young children.
  • Facts about Food Borne Illness. Microorganisms like bacteria and viruses cause most cases of foodborne illness. When foods become contaminated and when bacteria grow to harmful levels people get sick.

Complete:

  • Food Safety for Family Day Care Menu Assessment
    1. List the foods you have planned to serve as meals and/or snacks for the next five days.
    2. Check the foods on this menu that you think are potentially hazardous foods.
    3. Then figure how many PHFs you serve each day and for the week.
    1. List the five (5) PHFs that you serve most frequently each week.

      Use the Microbiological Foodborne Illness chart to identify
    2. Common biological contaminants that can occur in these foods. Write the name of the organism in column A
    3. Ways to prevent foodborne illness from each organism. Describe 2 ways to prevent foodborne illness in each food (such as cook thoroughly, keep food cold or prevent cross-contamination).

Be sure to submit the completed forms to your instructor.
