About This Course

Course Outline

To receive a certificate of completion, which can be applied in part to the CACFP traing requirement from the Massachusetts Department of Education, Nutrition, Health, and Safety, you must complete all course activities and participated in all course discussions.

There are three Units with two Sessions per Unit. Each of the three Units open on a Wednesday. The first Session of the week will be due on Friday and the second Session on the following Tuesday before the next Unit opens.

Session 1 - Icebreaker: Due on the first Friday

Session 2 - Menu Assessment: Due on the first Tuesday

  • Activity 1: Read Facts About Foodborne Illness (PDF)
  • Activity 2: Assess Your Menu for Potentially Hazardous Foods
  • Activity 3: Post in the Session 2 Discussion
  • Activity 4: Involve the Children in Your Care #1

 

Unit 2 Activities - Keep Pathogens Away from Food

Session 3 - Keep Things Clean: Due the second Friday

  • Activity 1: Read more of To Your Health! (online document)
  • Activity 2: Post in the Session 3 discussion

Session 4 - Flow of Food: Due on the second Tuesday

  • Activity 1: Read Keep Pathogens Away From Food (PDF)
  • Activity 2: Complete the Go With The Flow Activity
  • Activity 3: Participate in the Go With the Flow discussion
  • Activity 4: Involve the Children in Your Care #2

 

Unit 3 Activities - Stop Bacteria From Growing

Session 5 - Control Time and Temp: Due the third Friday

  • Activity 1: Finish Reading To Your Health!
  • Activity 2: Read Keep Bacteria From Growing (PDF)
  • Activity 3: Complete the Control Time and Temperature activity
  • Activity 4: Participate in the Time and Temperature discussion

Session 6 - Course Wrap-Up: Due the fourth Tuesday

  • Activity 3: Complete the Course Wrap-Up Evaluation Survey
