Program OverviewUMass Extension and Department of Nutrition collaborated with state and national partners on a three-phase study to examine barriers to successful exam completion among under-educated or limited English proficient school food service employees. Quantitative and qualitative methods were used to examine learners' needs, exam items, and educational materials. Findings from Phase I and Phase II led to the development of the Food Safety Word List, designed to help food service workers understand important food safety terms and concepts. In Phase III, food service educators were surveyed about the food manager certification course, materials they used, and participants they teach.
